HOW TO MAKE AN ICING ...my way
This recipe is sometimes called Marshmallow Icing, Boiled Icing or Regular Icing
You will need:
2 egg whites (large egg)
1 cup white granulated sugar
1/2 tsp cream of tartar
1 tbsp corn syrup
If you need to increase the amount of icing you need, just follow the 2:1 ratio (2 egg whites to 1 cup of sugar)
Things you need:
electric mixer
whisk
double boiler
the syrup should be very watery at this stage or if you let it drip, you'll see the thread-like syrup, by then your meringue is ready to be whip

In a mixer bowl, dissolve the sugar together with the egg whites
Over a double boiler, heat the mixture until it reaches the thread stage or ball stage or if you have a candy thermometer, until it reaches 160F.
Keep the heat at minimum. Makesure the bottom of the bowl doesn't touch the boiling water.

remove from the double boiler and add the cream of tartar and corn syrup at this stage. With the whisk attachment of your K/A Mixer, set your mixer on high or 10 and whisk for about 10 to 15 minutes. You will see that the meringue will double or triple in volume. Whisk until you reach hard stiff peaks.
your icing is now ready to be tinted to any color you desire.
I do recommend the Americolor soft gel paste. A little drop goes a long long way, so be careful when adding the gel paste.
you can make rossetes, borders, leaves,or just about anything ...

hi po, boiled icing dn po ba gngamit nio sa pag frost ng cupcakes na inoorder sa inyo? mas ok po b yun kesa sa buttercream frosting? i'm a newbie po kc sa baking, pero graduate po aq ng hrm, kaso po sa office po aq ngwowork, hnd related sa course ko, kya tuwing sundy lng po aq nkkpg try n mgbake, my mga natikman n po ako mga frosting, sobrang tamis, hope masagot nio ang tanong ko, tnx po
